Island Grill, a beloved name in Jamaica’s fast-food scene, is on a mission to grow its presence. With 18 stores currently in operation, the company plans to ramp up to at least 25 locations within the next four years. This ambitious expansion will involve an investment of approximately US$10 million to US$14 million.

A Unique Flavor in a Fried Chicken World

In a market dominated by fried chicken giants like KFC and Popeyes, Island Grill has carved out a niche for itself by offering grilled chicken. “At the end of the day, chicken is Jamaican food, but you have to distinguish yourself because everybody is after the fried-chicken market,” says Thalia Lyn, the company’s deputy chairman and founder. This commitment to grilled chicken, particularly jerk and barbecue styles, sets Island Grill apart, making it a healthier option for those craving Jamaican flavors.

New Beginnings at White River

The latest Island Grill store recently opened at White River, strategically located near the parish border of St Mary and St Ann. This choice was deliberate, as CEO Tania Waldron-Gooden explained, “We want to get out of the congestion.” The company opted against busier areas like the Drax Hall business district, prioritizing space that allows for a smooth drive-through experience. “We don’t want to be pigeon-holed,” she added, emphasizing the need for a layout that accommodates their unique operational requirements.

A Forward-Thinking Approach

Island Grill is shifting its strategy when it comes to scouting new locations. “We’re at the stage where landowners and developers are approaching us,” Waldron-Gooden noted. This proactive approach means they can influence the design and layout of new spaces, rather than simply fitting into pre-existing molds. “Our equipment package is quite different from a regular fast-food enterprise because we’re really fast-casual,” she explained, highlighting the need for more spacious setups.

Investment and Growth

The establishment of the White River store cost around US$1.6 million, and future locations are expected to require between US$1.5 million and US$2 million each, depending on their size and location. To fund this growth, Island Grill is collaborating with NCB Capital Markets and securing bank loans from National Commercial Bank and Scotiabank.
